Ise udon is equally essential, featuring unusually thick and soft noodles in a rich, dark broth made from tamari soy sauce. Other local specialties include tekone-zushi, a type of sushi with marinated bonito served over rice, and matsusaka beef, one of Japan's premium wagyu varieties sourced from the nearby Matsusaka region. Many shops also offer ise-ebi (spiny lobster) dishes and fresh seafood from Ise Bay during the appropriate seasons.
