Traditional Japanese Knife Sharpening Class in Tokyo

• All tools are provided. No equipment needs to be brought.

• Comfortable clothing is recommended. A notebook or camera is optional for documentation.

• The session is conducted in English and Japanese.

• The workshop is not wheelchair accessible and not stroller accessible.

• Not suitable for pets. 

• Infants must not sit on laps, and infant seats are not available.

• Not recommended for guests with back problems.

• Bookings must be completed at least 1 day before the session start time.

• The session departs on time. Latecomers cannot be accommodated.

Workshop Agenda

Knife History and Theory 

The session opens with an introduction to the history of Japanese knives, the differences between steel types used in Japanese blade-making, and the theory behind whetstone sharpening, including grit progression and blade angle. 

Duration: Approximately 30 minutes

Hands-On Whetstone Sharpening 

Participants sharpen their own blades under expert supervision using whetstones of different grits. Instructors guide each step of the process and provide individual corrections throughout the session.
