I took this class today with Moe and it was one of the most incredible experiences of my 5 weeks in Japan which has been full of some pretty amazing things. It was just Moe and me so I got a private lesson and it was so much more than that. Not only did I learn the fundamentals of Koji cooking which due to its health benefits and rich history is a growing cooking trend in the west, I got many other lessons on food and other Japanese history as well as one of the best meals I’ve had here. We made an “impossible” sushi roll that I will dream about, koji Dashimaki (the Japanese omelette that you’re always like, “I wonder how they made that?”—NOW I KNOW CAUSE I MADE IT #YAY!!), and duck jibuni. We also had salad and miso soup. And then we made MOCHI and knowing how to make it is both the best and worst because I will make and eat a lot of it :) Moe is a very special person and taking her class was an honor. 如果你离开金泽时没有上过她的课,你的金泽之行就不算完整。我可以写上很久很久,来描述我和萌一起度过的美好时光,但我相信你已经明白我的意思了。如果你看到了这段话,再次感谢你,萌!!!!❤️
